A quick and satisfying dish combining juicy chicken sausage and colorful vegetables, all cooked in an air fryer for a healthier alternative to traditional frying.

Ingredients

  • 1 lb chicken sausage, sliced into 3/4 inch rounds
  • 2 tablespoons olive oil
  • 1 bell pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Chop the veggies into uniform bite-sized pieces.
  2. In a bowl, drizzle the chopped veggies with olive oil and toss until coated.
  3. Mix spices with salt and pepper, sprinkle over veggies, and toss well.
  4. Add chicken sausage to the bowl and mix everything together.
  5. Preheat the air fryer to 390°F (200°C) and spray the basket with cooking spray.
  6. Place the mixture in the air fryer basket in an even layer and cook for 10 minutes, flipping halfway.
  7. Serve immediately, optionally over cooked cauliflower rice or brown rice.

Notes

For a vegetarian option, substitute chicken sausage with plant-based sausage or tofu. Customize with seasonal vegetables.
